This edible flower hardly gies any aroma or flavour so, in the kitchen, it is perfect to add to salads or as decoration. It combines perfectly with meats, seafood, salads and pastries. We could say that it is a very versatile flower in the kitchen.
The medicinal properties of this edible flower date back to antiquity. It is considered that it can be used for diseases such as gout, paralysis, headaches. Formerly it was also used against the bites of snakes and other poisonous reptiles.
As a curious fact about this edible flower, in Germany they considered that this flower had magical properties, that is why on the night of San Juan this flower was hung in the neck and they danced around the bonfire. For this reason, in many places in Spain, it is called the “San Juan herb”.
