Pineapple sage | Salvia elegans

Pineapple sage or Salvia elegans. This edible flower is red, but there are several colours that vary according to the species: blue, violet, pink and white. It finds its origin in Mexico and its name of “pineapple” is assigned to it because of its unique shape. This edible flower tastes sweet at the beginning with a bitter and even acidic finish. The peculiarity of this flower is its shape: elongated with pistils.

Pairing

In the kitchen the pineapple sage’s uses are extensive. It can be used to give bitter notes to recipes. Because of its shape, it is ideal for decorating and playing, as it gives an original touch. This flower combines well with salads, meats, soups, sea products, stews…

Medicinal properties

The healing properties of pineapple sage are diverse: for anxiety or for the reduction of blood pressure. According to scientific studies, this flower is potentially recommended for its antidepressant and anxiolytic action.

From salvias, essences containing tuyona, terpenes, alcohols … etc are obtained. Many virtues are attributed to them, especially the stimulants and tonics. An old custom was to take sage tea to regularize menstrual functions.
