Lyophilized verbena

Lyophilized verbena is a new product in the gastronomic world. This edible flower has a volatile and smooth texture and it does not provide a powerful taste. Because of these reasons, verbena is considered a versatile flower, because it can be used in any recipe to provide colour and brightness.

How is the flower lyophilized?

Lyophilization is another way to preserve verbena. It consists of dehydrating the edible flower, subjecting it to rapid freezing and eliminating the ice subsequently by slight heating under vacuum which transforms it into steam. In this way, the flower loses moisture but we manage to preserve its shape and size.

Lyophilized verbena

Verbena or Verbena Officinalis L. is a perennial plant that belongs to the Verbenaceae family. Flowers are grouped by bouquets. The size of each verbena flower is medium and their colour can vary, red, white, pink, purple…

This edible flower barely has flavour or scent, so, in the kitchen, it is perfect to be added in salads or to decorate recipes. It combines perfectly with meat, seafood, salads and baking. We can state that it is a very versatile flower.

As a curious fact about this edible flower, in Germany, they considered that this flower had magic properties, because of that in the night of the summer solstice (St John’s Eve), the inhabitants, put the flower around their necks and danced around the bonfire. That is the reason why in Spain, this plant is also known as “hierba de San Juan” (St John’s herb).
