Lyophilized buzz buttons

Lyophilized buzz buttons or Acmella oleracea, is also known as Sichuan flower as its taste is very similar to Sichuan pepper in Asia. This plant comes from Brazil and has no petals. But the most impressive thing of the buzz buttons is the sensation it produces in the mouth while eating it.

When eating this flower we have several phases in our mouth. First, you get an electric shock (soft or strong, depending on everyone’s sensitivity), after that, you start to feel your mouth numb and you start to feel tickling. In the final phase, you feel an intense freshness all over your mouth. This process intensifies the flavours of everything you eat after it. A tsunami of feelings just in an edible flower!

A curious fact about this edible flower is that the active principle of oral anaesthetic is extracted from it.

This edible flower is perfect for cocktails. It is mainly used in gin tonics to use the flavour contrast and the explosion of emotions. But we can use it also in salads, creams, soups, in a cake’s dough or with any kind of meat.

In Innoflower we also recommend using this flower for making cakes. To do this, the whole flower should not be used, but rather the buzz buttons should be made into a powder and mixed into the dough.

The component that provides the buzz buttons anaesthetic, antimicrobial, vasodilator and antioxidant properties is spilanthol. In some countries, like Thailand, they even use its leaves to enhance the analgesic effect.

How is the flower lyophilized?

Lyophilization is another way to preserve buzz buttons. It consists of dehydrating the edible flower, subjecting it to rapid freezing and eliminating the ice subsequently by slight heating under vacuum which transforms it into steam. In this way, the flower loses moisture but we manage to preserve its shape and size.
