The dehydrated salvia cassis belongs to Labiaceae family. This plant comes from South America since it needs warm and damp places. This flower has a small size and a very intense red colour. Salvia cassis’ scent is fruity, so is its taste. In the mouth, salvia cassis has sweet and acid notes. Therefore, the dehydrated salvia cassis can be used to decorate a sauce, to strengthen the taste of a cake or to decorate a red meat stew.

The dehydrated salvia cassis belongs to Labiaceae family. This plant comes from South America since it needs warm and damp places. This flower has a small size and a very intense red colour. Salvia cassis’ scent is fruity, so is its taste. In the mouth, salvia cassis has sweet and acid notes.

This edible flower is also available in other formats: fresh flower and lyophilized flower.

Pairing

To use the dehydrated salvia cassis it won’t be necessary to rehydrate it because its texture is delightful in the mouth. As it has sweet notes, this flower can be added in any recipe: sweet, salty bitter… Therefore, the dehydrated salvia cassis can be used to decorate a sauce, to strengthen the taste of a cake or to decorate a red meat stew.

How is the flower dehydrated?

Dehydration is another way of preserving salvia cassis. It consists of softly dehydrating the edible flower, so we obtain a natural and crispy product. The main difference with the lyophilized salvia cassis is that the dehydrated ones lose a bit of their shape due to the longer duration of the process.

To use dehydrated flowers in the kitchen, we have to re-hydrate them either with a sauce, a soup, in a cake’s dough…
