The dehydrated peppermint comes from the plant known as Mentha chocolate peppermint. This is a perennial plant whose height can reach 60cm. Its leaves emit an intense mint smell and are dark green coloured. The reverse of the leaf is brown. These sprouts are available the whole year.

Dehydrated peppermint has a crispy texture and a very intense aroma. In the kitchen, it can be used in different ways: as an infusion, in a chocolate bar, to prepare a cake… It combines with sweet ingredients, acid or salty ones.

Pairing

Dehydrated peppermint has a crispy texture and a very intense aroma. In the kitchen, it can be used in different ways: as an infusion, in a chocolate bar, to prepare a cake… It combines with sweet ingredients, acid or salty ones.

It is the chef’s choice to re-hydrate the flower or not. The special feature of this product is its crispy texture, so the way to use it will depend on the result that we want to obtain. We can use this product, for instance, as topping in orange or chocolate ice cream, as a base to prepare cookies…

We also have available other formats of peppermint: crystallized, lyophilized and fresh.

How is the flower dehydrated?

Dehydration is another way of preserving peppermint. It consists of softly dehydrating the edible flower, so we obtain a natural and crispy product. The main difference with the lyophilized peppermint is that the dehydrated ones lose a bit of their shape due to the longer duration of the process.

To use dehydrated flowers in the kitchen, we have to re-hydrate them either with a sauce, a soup, in a cake’s dough…
