Mini pansy, also known as viola, belongs to the Violaceae family. With axillary, round and lonely petals, this flower has its bloom since the end of summer until spring. Its taste is sweet with a bittersweet trace on the mouth that also reminds of nuts. In the kitchen, the dehydrated mini pansy is a flower that fits in with meats and fish adding it to sauces.

Dehydrated mini pansy

The dehydrated mini pansy, also known as viola, belongs to the Violaceae family. With axillary, round and lonely petals, this flower has its bloom since the end of summer until spring. Although in Innoflower we cultivate it in a location (Soria) that allows the flower to bloom in summer, so we can offer this variety of flower during the whole year. Its colours are varied: yellow, white, violet and purple. Its taste is sweet with a bittersweet trace on the mouth that also reminds of nuts.

Pairing

In the kitchen, the dehydrated mini pansy is a flower that fits in with meats and fish adding it to sauces. Although in bakery it is very common to use this flower to decorate, we can also add the dehydrated mini pansy to the cake’s dough. Some great ideas that we dare to recommend are really easy to do. For instance, preparing ice cubes with the flower inside or adding the flowers to a cocktail.

Talking about cocktails, this flower is more and more used every day in this world where new ways of surprising are always needed. Imagination plays an important role to create new and original things. In the case of the dehydrated mini pansy, it can be used to decorate or infuse it 5 minutes until we get a blue turquoise colour. If after this we add some lemon, magic begins!

How is the flower dehydrated?

Dehydration is another way of preserving mini pansies. It consists of softly dehydrating the edible flower, so we obtain a natural and crispy product. The main difference with the lyophilized mini pansies is that the dehydrated ones lose a bit of their shape due to the longer duration of the process.

To use dehydrated flowers in the kitchen, we have to re-hydrate them either with a sauce a soup, in a cake’s dough…
