Pansies belong to the family of Violaceae. Numerous flowers, axillars, with round and lonely petals. Dehydrated pansies belong to this clan, they are very resistant to winter and they bloom since the beginning of autumn until the beginning of warm weather. Colours of dehydrated pansies are varied: yellow, white, violet and purple. Its taste is sweet, slightly bittersweet in the mouth, reminiscent of nuts.

Dehydrated pansies have a rough texture, even crispy. In the kitchen, the pansy can be rehydrated to create a homogeneous presentation or to create a texture contrast.

The dehydrated pansy belongs to the family of Violaceae. Numerous flowers, axillars, with round and lonely petals. Dehydrated pansies belong to this clan, they are very resistant to winter and they bloom since the beginning of autumn until the beginning of warm weather. In Innoflower we cultivate them in a location (Borobia, Soria) that allows the pansies to bloom in summer, so we can offer them the whole year.

Colours of dehydrated pansies are varied: yellow, white, violet and purple. Its taste is sweet, slightly bittersweet in the mouth, reminiscent of nuts.

Pairing of the dehydrated pansy

In the kitchen, the dehydrated pansy is a versatile edible flower. It can be added to any type of recipe and it is even useful for cocktails. Its colours are the most attractive feature of this flower, as well as its great size. The pansy can be used in both sweet and salty dishes.

How is the flower dehydrated?

Dehydration is another way of preserving pansies. It consists of softly dehydrating the edible flower, so we obtain a natural and crispy product. The main difference with the lyophilized pansy is that the dehydrated ones lose a bit of their shape due to the longer duration of the process.

To use dehydrated flowers in the kitchen, we have to re-hydrate them either with a sauce, a soup, in a cake’s dough…
