Cornflower or Centaurea cyanus belongs to the family Asteraceae. This plant is native to Europe and Western Asia. These flowers have a peripheral shape, are very sumptuous, and have an intense blue colour. Its size is medium, and this edible flower has an herbaceous and nuts taste, with a slightly sweet final taste. In order to use correctly this flower in the kitchen, we have to take into account different things: its shape, its colour, its taste and its texture.

  • Flowers are packed in micro-perforated plastic trays, guaranteeing the conservation of flowers in an adequate temperature (4º-8º)

Cornflower or Centaurea cyanus belongs to the family Asteraceae. This plant is native to Europe and Western Asia. These flowers have a peripheral shape, are very sumptuous, and have an intense blue colour. Its size is medium, and this edible flower has an herbaceous and nuts taste, with a slightly sweet final taste.

Pairing

In order to use correctly this flower in the kitchen, we have to take into account different things:

  • Shape: for small preparations, this flower may be too big when using the whole cornflower, but we can instead provide colour with its petals, while respecting the symmetry of our preparation.
  • Colour: its blue colour (with violet tones) is so intense that we have to know exactly how to combine it with the rest of ingredients.
  • Taste: the slight nuts flavour makes cornflower an ingredient that can be used with every kind of food (meat, fish, vegetables, sweets…)
  • Texture: really silky petals.

Medicinal properties

Among the many uses that cornflower has, some stand out: diuretic, antibiotic, antipyretic and anti-inflammatory. Its use is quite frequent to treat conjunctivitis, blepharitis and eyestrain. It can be also used for cases of slow digestion, rheumatism, anorexia, varicose veins, hair treatments… It is increasingly common to find cornflower among the components of beauty products of recognized brands. As with other types of plants whose flowers are edible, this one in particular is widely used in the field of cosmetics due to the multitude of beneficial properties for health and beauty.

How to use it

In order to use cornflower in the kitchen, we have to wash it first. Despite the selection we make in our workshop, some insects or “bugs” may be found. In addition, when we wash them we eliminate dust, dirt or other natural components that may come from the field.

From this edible flower we can use both its petals and the whole flower, either for decoration or to integrate it in recipes.
